The Roasting Plank Seafood Rub
Every time you make a rub it will always come out slightly different and , for us, that is a good thing. It all depends what you have in the cupboard and whether you like your rub with or without chilli or garlic etc.

3 tbsp brown palm sugar 1 tbsp ground black pepper 1 tbsp ground sea salt 1 tbsp granulated onion 1/2 tbsp crushed mustard seeds 2 tbsp dried dill 1 tbsp crushed coriander seed 1 tsp granulated garlic |
Mix all the ingredients together in a large bowl and the use as a rub on your salmon, tuna and prawns- this is a simple sweet and spice rub that always adds an extra something to your food.
If you've made too much then put the rest into an air tight container and place in a cool, dry place for up to 3 months.
