The Roasting Plank BBQ Rub
Every time you make a rub it will always come out slightly different and , for us, that is a good thing. It all depends what you have in the cupboard and whether you like your rub with or without chilli or garlic etc.
Our favourite rub is The Roasting Plank BBQ Rub which can used on chicken, pork, beef and lamb.

1 tsp sea salt 1 tsp cumin 1 tsp ground black pepper 1 tsp flake or ground garlic 1 tsp mustard powder 1 tsp chilli powder 1/2 dry crushed dried chilli (optional) 1/2 tsp paprika 1/2 tsp thyme 1/2 tsp basil 1/2 tsp coriander 1/2 cinnamon 2 tsp brown sugar

Mix all the ingredients together in a large bowl and the use as a rub on your chicken, pork, vegetables or steak. If you've made too much then put the rest into an air tight container and place in a cool, dry place for up to 3 months.
